How important is it to know the local language?

Very very important. Office clerks and your customers normally speak only Italian. 

There are several opportunities to learn Italian. You could google “corsi gratuiti italiano per stranieri”. In Lazio, for example, check this page: http://www.romamultietnica.it/news/corsi_di_lingua_italiana_per_stranieri.html

The 9-Conversations project is an Erasmus+ Strategic Partnership KA2 Project for adult learners. We recognize that a significant minority of refugees already have experience of running their own business. The aim of the 9-Conversations project is to raise awareness about the ways in which immigrants can set up a business in their new national country and especially in the differences.
